The black gram in its three dressings: whole in its deep matte skin, split with the husk, and husked to ivory. The quiet foundation of the idli, the dosa, and the papad.
Provenance
Urad is gathered from the kharif fields of Madhya Pradesh, Rajasthan, and Uttar Pradesh, with the southern belt adding its share. It is the quiet foundation of half the subcontinent's table (the idli, the dosa, the papad), and the Gulf's kitchens keep a steady call for it.
Carriage & Packing
The house carries all three dressings: whole in the deep matte skin, chilka split with the husk, and dhuli husked to ivory. Every lot is double-passed through the colour-sorter, cleared of stone and metal, and packed from fifty-kilogram bags down to retail pouches.
