Provenance

The chillies of the house are drawn from the fields of Haryana, dried whole in the open air and sorted twice: once for the heat the pod carries, once for the depth of its colour. The two are weighed separately, for a cook prizes one and a processor the other.

Carriage & Grade

Each lot travels under its own designation of heat and tone, so a counterparty reorders not 'chilli' but the precise pod they knew. Selected for kitchens and processing houses of long standing across the Gulf and beyond.
