Provenance

Cumin is sown in the winter fields of Gujarat and Rajasthan and gathered before the heat arrives, when the seed is at its most aromatic. The house buys at origin, by named field and season, and holds each arrival apart until it has been seen, smelled, and passed.

Carriage & Grade

Lots are machine-cleaned at origin and graded for oil, colour, and constancy of seed. The house carries cumin in measured volumes, sufficient for the steady kitchen and the considered processor, never so much that a season's character is averaged away.
