Provenance
Green cardamom comes down from the Cardamom Hills of Kerala, where altitude and rain make the pod slow and aromatic. It is picked while still green, before the husk pales, and dried with the care owed to the most valuable whole spice the house carries.
Carriage & Grade
Pods are graded bold and verdant, and lots are reserved rather than offered, allocated to tables and blenders the house has known. Cardamom rewards patience and punishes volume; the house trades it accordingly.
